Broccoli Rabe With Sherry Vinegar

Ingredientes

  • 1/2 lb Broccoli rabe
  • 1 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Water
  • 1 1/2 tsp Sherry vinegar*

  1. Available at specialty foods shops and some supermarkets
  2. Throw away any yellow leaves and hollow or possibly coarse stems from broccoli rabe. Cut off top 5 inches of broccoli rabe and reserve remaining stems for another use.
  3. In a large heavy skillet heat oil over moderately high heat till warm but not smoking and saute/fry broccoli rabe, stirring occasionally, till crisp-tender, about 4 min. Add in water and cook, covered, 2 min, or possibly till tender.
  4. Remove skillet from heat and stir in vinegar and salt and pepper to taste.
  5. Serves 2.
