Broccoli Salad with Bacon and Cheddar Cheese is a classic Midwestern party and potluck dish. Except where I come from, we call it Piggly Wiggly Salad, or just Piggly Wiggly. In my family, we never confuse the salad with the grocery store. This is an easy, delicious salad full of broccoli, cauliflower, red onions, a full pound of bacon, and shredded cheddar cheese. All of that is smothered in a 3-ingredient dressing that is creamy, sweet, and tangy all at once. Make it in advance so the flavors can blend, then be prepared to hand out the recipe at the party. Unless you are in the Midwest, then your guests probably already have it.

The potentially daunting part of Piggly Wiggly is the vegetable prep. Normally I spend 30 minutes chopping the broccoli and cauliflower into bite-sized, uniform florets. But this time, I dumped everything in the food processor (in batches) and gave it a few pulses – 3 to 5 ought to do it. Yes, the vegetables were more ground up. It is possible the salad is less attractive this way. But honestly, the dressing coated the salad better and it was much easier for my toddler CJ and other children to enjoy. Easier for the adults to eat too; the salad fits better on a fork in this finely chopped state versus attempting to balance florets on a fork. All the easier to shovel it in, my dear!

Chopping bite-sized, uniform, attractive florets works just fine too. Do whatever makes you happy.

The dressing is super simple too: Mayonnaise (or Miracle Whip), sugar, and vinegar. That’s it. Whisk it all together and pour it over the top, and you’re good to go! 2 bunches broccoli, chopped 1 head cauliflower, chopped 1 medium red onion, diced 2 cups shredded cheddar cheese 1 pound bacon, fried and crumbled 2 cups mayonnaise 1 cup sugar ¼ cup white vinegar Instructions

In a large bowl, combine broccoli, cauliflower, onion, cheese, and bacon. In a small bowl, whisk together mayonnaise, sugar, and vinegar. Pour mayonnaise mixture over the salad ingredients and toss well until evenly coated. Chill at least 30 minutes to blend flavors. 3.2.2708
