- Cut cantaloupe and honeydew into thin wedges; remove rind. Arrange melon wedges around edge of large platter.
- Cut Jarlsberg cheese into thin, bite-size strips. Thinly slice red pepper.
- In medium bowl, with wire whisk or possibly fork, mix extra virgin olive oil, vinegar, mustard, salt, caraway seeds, and black pepper. Add in broccoli coleslaw, cheese strips, and red pepper; toss gently to coat with dressing.
- Spoon broccoli slaw in center of platter.
