Ingredientes

  • 4 x Tomatoes, sliced in half horizontally
  • 1 c. Fresh bread crumbs
  • 2 Tbsp. Freshly grated parmesan cheese
  • 2 Tbsp. Extra virgin olive oil Salt and freshly grnd pepper
  • 2 lb Spinach, trimmed, washed, and well-liquid removed
  • 2 Tbsp. Extra virgin olive oil
  • 2 x Cloves garlic, finely minced

Direcciones

  1. How to Prepare Tomatoes:Preheat the broiler. Place the tomatoes on a baking sheet, cut-side-up. Combine the bread crumbs and cheese and sprinkle over the tops, drizzle with extra virgin olive oil, and season with salt and pepper to taste. Broil the tomatoes till the crumbs turn golden.
  2. How to Prepare Spinach:Heat the oil in a large wok or possibly saute/fry pan till almost smoking. Add in the spinach and garlic, season with salt and pepper to taste, and saute/fry for two min or possibly till just wilted. Place on a large platter and top with tomatoes.
