Ingredientes

  • 2 x yellow squash
  • 2 x zucchini
  • 1 x eggplant
  • 1 x tomato
  • 1 x purple onion
  • 1 x sweet yellow pepper
  • 1 x sweet red pepper
  • 1 x green bell pepper
  • 1 lb cremini mushrooms
  • 3/4 c. balsamic vinegar
  • 3/4 c. vegetable oil
  • 3/4 c. honey
  • 1 Tbsp. salt
  • 2 tsp freshly-grnd black pepper

Direcciones

  1. Quarter squash, zucchini, and eggplant lengthwise, and cut in half. Cut tomatoes and onions into thick slices. Quarter peppers. Leave mushrooms whole.
  2. Combine marinade. Pour over vegetables. Refrigeratefor 2 1/2 hrs.
  3. Arrange vegetables on a broiler pan and bake at 350 degrees in a preheated oven for 20 min.
  4. This recipe yields 10 to 12 servings.
