Bronzed Salmon Zinfandel

Ingredientes

  • 8 ounce Fresh salmon
  • 1 tsp Cajun seasoning
  • 1 Tbsp. Peanut oil
  • 1 ounce Smoked salmon pcs, (diced)
  • 1 ounce Scallions, (diced)
  • 3 ounce Tomatoes, (diced)
  • 1 ounce Capers
  • 3 ounce White Zinfandel
  • 2 ounce Heavy whipping cream
  • 1 x 2 ounces who butter Fresh grnd black pepper
  • 3 ounce Mashed potatoes

Direcciones

  1. Sprinkle the seasoning on the fresh salmon. Heat a cast iron pan to smoking. Cook salmon lightly on both sides (prepare salmon to temperature i.e.: medium rare, medium, etc...).
  2. In a separate pan, add in with peanut oil and scallions, tomatoes, capers and smoked salmon. Deglaze with White Zinfandel. Add in heavy cream and butter. Reduce till thick rich consistency.
  3. To prepare the final dish, put the mashed potatoes in the center of plate. Place salmon on top and place sauce on the side of salmon
  4. (like a moat).
