- 6 tablespoons unsalted butter
- 2 cups all purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 2 egg whites,
- 1/4 teaspoon salt
- 3/4 cup milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- For the Goat Cheese Cream:
- 3.5 ounces goat cheese Crotin
- 1/3 cup heavy cream
- 1 teaspoon vanilla
- For the Blackberry Sauce:
- 12 ounces fresh blackberries, 16 berries reserved
- 2 tablespoons honey
- 1 tablespoon rum
- 1 tablespoon water

.%20%20I%20don%E2%80%99t%20know%20that%20I%E2%80%99m%20ready%20for%20it%20to%20come%20to%20an%20end.%20%20Are%20you?%20%20Who%20are%20you%20rooting%20for?%20%20Kristen%20Kish%20or%20Brooke%20Williamson?%20%20I%20hate%20playing%20favorites%20on%20this%20blog,%20but%20for%20this%20one%E2%80%A6I%20have%20to%20say%20that%20I%20am%20Team%20Kristen%20all%20the%20way.%20%20She%E2%80%99s%20made%20some%20amazing%20food%20over%20the%20entire%20season%20and%20I%20will%20be%20shocked%20if%20she%20doesn%E2%80%99t%20win%20the%20whole%20shabang.%3C/p%3E%3Cp%3EI%20think%20my%20favorite%20moment%20from%20the%20show%20was%20when%20they%20revealed%20Kristen%20as%20the%20winner%20of%20Last%20Chance%20Kitchen.%20%20I%20had%20a%20feeling%20it%20was%20going%20to%20be%20her,%20but%20I%20wasn%E2%80%99t%20sure.%20%20Sheldon%20is%20a%20great%20chef,%20so%20it%20was%20definitely%20a%20nail-biter%20until%20she%20walked%20out.%20%20Did%20you%20feel%20the%20same?%3C/p%3E%3Cp%3EThe%20last%20episode%20was%20filled%20with%20TONS%20of%20deliciousness,%20but%20I%20couldn%E2%80%99t%20get%20beyond%20Brooke%E2%80%99s%20Brown%20Butter%20Cake%20with%20Goat%20Cheese%20and%20Blackberries%20and%20I%20knew%20I%20needed%20to%20make%20my%20own%20take%20on%20her%20dish.%20%20And%20soon!%20%20My%20interpretation%20is%20an%20easy%20to%20make%20sheet%20cake%20that%20I%20cut%20with%20a%20cookie%20cutter.%20%20Then%20I%20take%20goat%20cheese%20Crotin%20and%20whiz%20it%20with%20heavy%20cream%20and%20vanilla%20to%20make%20a%20silky%20goat%20cheese%20cream%20and%20lastly%20I%20blitz%20fresh%20blackberries%20with%20rum%20and%20honey%20and%20it%E2%80%99s%20time%20to%20plate%20it.%20%20Super%20easy,%20totally%20elegant%20and%20did%20I%20mention%20it%20was%20delicious?%20%20The%20brown%20butter%20takes%20this%20cake%20to%20a%20whole%20new%20plain%20of%20yum.%3C/p%3E%3Cp%3EI%20have%20to%20admit%20that%20one%20of%20my%20favorite%20quotes%20from%20this%20season%20of%20Top%20Chef%20came%20from%20Chef%20Wolfgang%20Puck.%20%20It%20was%20the%20episode%20where%20they%20were%20all%20at%20Chef%20Tom%20Colicchio%E2%80%99s%20(amazeballs)%20house%20on%20the%20Puget%20Sound%20in%20Seattle.%20%20I%20could%20seriously%20live%20in%20that%20backyard%20with%20that%20view%20for%20the%20rest%20of%20my%20life%20(minus%20the%20300%20days%20of%20rain%20Seattle%20gets,%20of%20course).%20%20They%20were%20all%20jawing%20about%20the%20friend%20chicken%20and%20Chef%20Wolfgang%20says,%20%E2%80%9CTop%20Chef?%20I%20wouldn%E2%80%99t%20even%20call%20this%20the%20Apprentice.%E2%80%9D%20Gotta%20love%20a%20good%20%E2%80%9CWolfism%E2%80%9D.%20%20I%20know%20I%20was%20cracking%20up%20and%20I%20think%20it%E2%80%99s%20possible%20that%20Donald%20Trumps%20toup%20flipped%20at%20the%20same%20time.%3C/p%3E%3Cp%3EHere%E2%80%99s%20a%20recap%20of%20my%20posts%20for%20Top%20Chef%20Seattle:%3C/p%3E%3Cp%3ELet%E2%80%99s%20get%20to%20some%20cake%E2%80%A6but%20before%20we%20do,%20don%E2%80%99t%20forget%20to%20watch%20this%20Wednesday%20at%2010/9%20C.%20%20I%20will%20be%20live%20tweeting%20and%20Facebooking%20during%20the%20finale%20%E2%80%93%20so%20let%E2%80%99s%20chat%20then%20about%20all%20things%20Top%20Chef!%20No%20more%20delay,%20check%20out%20this%20recipe%20for%20my%20take%20on%20Brooke%E2%80%99s%20dessert%20that%20WOW%E2%80%99d%20Martin%20Yan%20on%20the%20last%20episode.%3C/p%3E%3Cp%3EBrown%20Butter%20Cake%20with%20Goat%20Cheese%20Cream%20&%20Blackberry%20Sauce%20%E2%80%93%20%23TopChef%3C/p%3E%3Cp%3EThis%20is%20an%20easy%20and%20elegant%20dessert%20that%20can%20be%20made%20ahead%20and%20is%20quick%20to%20assemble%20at%20your%20next%20dinner%20party.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20Cake:%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EFor%20the%20Cake:%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan%20add%20the%20butter%20and%20melt%20over%20medium%20heat.%20Once%20the%20butter%20begins%20to%20simmer,%20turn%20down%20to%20medium-low%20and%20simmer%20until%20brown%20bits%20begin%20to%20rest%20on%20the%20bottom%20of%20the%20pan%20and%20the%20butter%20starts%20to%20smell%20nutty,%20about%2010%20minutes.%20Turn%20down%20the%20heat%20if%20it's%20browning%20too%20quickly.%20Pour%20into%20a%20clean%20bowl%20and%20place%20in%20the%20freezer%20for%205%20minutes,%20or%20until%20just%20solid.%20Stir%20briskly%20just%20before%20adding%20to%20flour%20mixture.%3C/p%3E%3Cp%3ESift%20the%20flour,%20sugar%20and%20baking%20powder%203%20times%20and%20set%20aside.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20F.%20Grease%20a%2013x9%20glass%20baking%20dish%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20an%20electric%20mixer%20beat%20the%20egg%20whites%20and%20salt%20until%20stiff.%20Add%20the%20flour%20mixture%20along%20with%20the%20milk,%20vanilla%20extract,%20almond%20extract%20and%20brown%20butter.%20Beat%20on%20on%20medium-high%20for%201%20minute.%20Pour%20into%20prepared%20baking%20dish%20and%20spread%20to%20the%20edges.%3C/p%3E%3Cp%3EBake%2020-25%20minutes,%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%20Remove%20and%20allow%20to%20cool%20in%20the%20pan%20for%2010%20minutes,%20then%20turn%20out%20and%20cool%20completely.%3C/p%3E%3Cp%3EFor%20the%20Goat%20Cheese%20Cream:%3C/p%3E%3Cp%3EAdd%20the%20goat%20cheese,%20heavy%20cream%20and%20vanilla%20to%20the%20bowl%20of%20a%20food%20processor%20and%20process%20until%20smooth.%20Remove%20to%20a%20bowl%20and%20refrigerate%20until%20ready%20to%20use.%3C/p%3E%3Cp%3EFor%20the%20Blackberry%20Sauce:%3C/p%3E%3Cp%3EAdd%20the%20berries,%20rum,%20honey%20and%20water%20to%20a%20clean%20food%20processor%20bowl%20and%20process%20until%20smooth.%20Strain%20into%20a%20clean%20bowl,%20pressing%20the%20solids%20and%20discard%20seeds.%20Refrigerate%20until%20ready%20to%20use.%3C/p%3E%3Cp%3ETo%20Assemble:%3C/p%3E%3Cp%3EUse%20a%203%20inch%20round%20cookie%20cutter%20and%20cut%20out%208%20circles%20of%20cake.%20Using%20a%20tablespoon,%20run%20a%20smear%20of%20goat%20cheese%20cream%20on%20each%20of%208%20plates.%20Top%20with%20the%20cake%20and%20drizzle%20with%20the%20blackberry%20sauce.%20Add%20a%20fresh%20blackberry%20or%202%20to%20each%20plate%20and%20serve.%3C/p%3E%3Cp%3E3.1%3C/p%3E%3Cp%3E%3C/p%3E%3Cp%3EContent%20and/or%20other%20value%20provided%20by%20our%20partner,%20Bravo.%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
