How can a dessert consumed many years ago spark a memory in your mind out of the blue?

Randomness. I hear my girls say, “That was so random”, all the time. You guys, that is what happened to me. Years ago, I had a Blondie Brownie, topped with a scoop of vanilla bean ice cream and then an incredible butterscotch sauce on top.

That memory of such a luscious dessert just randomly appeared on my mind. I was drooling just thinking about it.

When Blue Diamond sent me a canister of their Honey Roasted Cinnamon Almonds, I decided to make a sauce to pour over my low carb vanilla bean ice cream.

I actually had no idea that it would so closely resemble that butterscotch sauce oozing over the ice cream and Blondie I had years ago.

My stepson says you can’t go wrong with browned butter on just about anything.

As long as you keep this a secret, I ate the whole thing. Hey, look I was home alone and it was a small batch, really it was. I scrapped the sauce pan trying to get every last bit of deliciousness. This dessert topping outweighs the taste of that butterscotch sauce that randomly entered my mind.

I guarantee you this will be your go to sauce for your ice cream or Blondie’s from now on.

½ cup chopped Blue Diamond Honey Roasted Cinnamon Almonds 2 Tablespoons butter 2 Tablespoons brown sugar (I used Splenda Brown Sugar blend) ½ teaspoon ground cinnamon ¼ teaspoon ground nutmeg 6 Tablespoons Water

Heat a medium-size skillet on low to medium heat. In the skillet, add the butter and stir until it starts to turn a golden color (about 2 minutes). Then add the brown sugar Continuously stir the mixture until tit starts to foam (about 1 to 2 minutes) Add the chopped almonds, nutmeg, and cinnamon. Stir all ingredients together. Add the water and continue stirring until it reduces to a thick sauce (about 7 minutes) 3.2.2925
