Receta Brown Rice Pulao
Ingredients:
- Brown Rice – 1 cup, soaked for 15 to 20 minutes
- Onion – 2 small or 1 medium, sliced
- Carrot – 1, chopped
- Beans – 5 to 6, chopped
- Capsicum – 1, small, chopped
- Broccoli – 1/2 cup, chopped
- Green Peas – 1/4 cup, shelled
- Green Chillies – 2, slit
- Cinnamon – 1/4 inch piece
- Green Cardamoms – 2
- Cloves – 2
- Coriander Leaves – handful, chopped
- Cumin Seeds – 1/4 tsp
- Garlic – 1/2 tsp, minced
- Salt as per taste
- Oil as required
Method:
1. Heat 1 tsp oil in a heavy-bottomed pan.
2. Add the cinnamon, cumin seeds, cardamoms and cloves.
3. Saute well for 45 seconds.
4. Add the onions and garlic.
5. Stir-fry until onions turn brown.
6. Now add the rice, vegetables, green chillies and salt.
7. Mix well.
8. Pour 3 to 4 cups of water.
9. Simmer over low flame until most of the water has evaporated and rice is cooked and vegetables are tender.
10. Remove and transfer to a serving bowl.
11. Garnish with coriander leaves.
12. Serve hot.
