Brown Sugar Banana Yogurt Muffins






I just hate to throw away ripe bananas when I love banana breads so much!

Ingredientes

  • 1/2 cup butter, softened
  • 1 cup dark brown sugar, firmly packed
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 2 large)
  • 6 oz Yogurt, Light Banana Cream Pie
  • 1 teaspoon vanilla extract
  • 1 cups whole wheat flour
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup toasted chopped pecans

Direcciones

  1. Preheat oven to 350 degrees.
  2. Beat butter at medium speed with an electric mixer until creamy. Gradually add brown sugar, beating until light and fluffy.
  3. Add eggs, 1 at a time, beating just until blended after each addition.
  4. Stir in mashed bananas, yogurt, and vanilla.
  5. Add flour, baking soda, baking powder and salt.
  6. Stir in pecans.
  7. Beat at low speed just until blended. (Do not over beat.)
  8. Spoon batter into 12 lightly greased muffin cups.
  9. Bake for 20 minutes or until a wooden pick inserted in center comes out clean. Remove from pans immediately, and cool 10 minutes on wire racks.
