Receta Brown Sugar Meringue With Caramelised Banana

- Preheat oven to 110 c / 225 f / Gas Mark 1/4.
- Whisk egg whites till stiff, gradually add in the sugar - beating in between each addition.
- Place baking parchment on baking sheet and spoon 12 meringues on and bake for 3 1/2 hrs. Remove and cold.
- Slice bananas and place in a frying pan. Sprinkle over the sugar and the rum (optional) and cook till browned and tender - 3 to 5 min.
- Serve with the meringues.
