Brown Sugar Meringue With Caramelised Banana

Ingredientes

  • 4 x Egg Whites
  • 125 gm Granulated Sugar
  • 125 gm Demerara Sugar
  • 4 x Ripe Banana
  • 2 Tbsp. Light Muscavado Sugar
  • 75 ml Rum, (optional)

Direcciones

  1. Preheat oven to 110 c / 225 f / Gas Mark 1/4.
  2. Whisk egg whites till stiff, gradually add in the sugar - beating in between each addition.
  3. Place baking parchment on baking sheet and spoon 12 meringues on and bake for 3 1/2 hrs. Remove and cold.
  4. Slice bananas and place in a frying pan. Sprinkle over the sugar and the rum (optional) and cook till browned and tender - 3 to 5 min.
  5. Serve with the meringues.
