Receta Bruschetta Grilled Chicken
Bruschetta Grilled Chicken. A perfect summer meal. Simple to make, healthy and bright fresh flavor. Grilled chicken topped with juicy sweet tomatoes, lots of fresh basil, some garlic, olive oil and a drizzle of balsamic vinegar.
I don’t know about you but when it comes to summer we are busy and I am not looking to spend hours in a hot kitchen. This dish right here, Bruschetta Grilled Chicken is perfection! The flavors are so bright and fresh and it really doesn’t take much time at all to throw it all together.
I seasoned 6 chicken breasts very simply with a little drizzle of olive oil, salt and pepper. Grilled until cooked through and some nice grill marks have developed. For the bruschetta component I diced up some big juicy tomatoes, garlic, lots of fresh basil, some olive oil, salt, pepper and a bit of balsamic vinegar. Throw on top of the chicken and you are done!
I made this for a family BBQ so I actually cut each chicken breast into halves or thirds after the chicken was grilled and have some time rest. This can be served hot or cold and is really great over top a salad or tossed with pasta! You all have got to try this one, its AMAZING! Print Brushetta Grilled Chicken Author: Angela LeMoine Ingredients 6 boneless, skinless chicken breasts 4 large tomatoes, small dice 2 cloves of garlic, finely chopped a couple good handfuls of chopped fresh basil ¼ cup olive oil 2 Tbsp balsamic vinegar salt pepper Instructions Drizzle a little olive oil no the chicken breasts and season with a bit of salt and pepper. Grill on a hot grill for about 4 minutes per side {cooking time will vary because of thickness of the chicken breast and the temperature of the grill}. Cook until the juices run clear and the meat is just cooked through. Set aside. Toss together the diced tomatoes, garlic, basil, ¼ cup olive oil, balsamic vinegar and salt and pepper to taste.
