Receta Buckeye Balls ~ Redone
In just a few days, those of us in the United States will be celebrating Thanksgiving which means it’s also the official start of the holiday season. Many of us have holiday food traditions that have been passed on from generation to generation creating memories throughout the years; which is what this month’s recipe redux is all about. Food memories.
Growing up in a family of foodies long before the term foodie became popular, I have many food memories. From my father working in his vegetable garden which fed us for a good portion of the year to him making his own sausage. My mother, on the other had was always ready to bake a cake or cookies. My parents were always in the kitchen cooking something up. This time of year, their favorite food project was making sweets; fudge, toffee, buckeye balls, cookies and cakes. They had to make sure there was something to feed to the holiday visitors when they dropped by. My favorite holiday sweet was the buckeye balls, how can you not love peanut butter and chocolate? I used to love helping them out with their candy making, and my job was to dip the peanut butter balls into the chocolate.
The recipe that my parents used had more ingredients than peanut butter and chocolate which made me think twice about eating them as I got older. The peanut butter portion had powdered sugar, butter, peanut butter and chocolate. My version of buckeye balls contains no powdered sugar, no butter. Just peanuts, maple syrup, dark chocolate and a splash of coconut oil. Less ingredients and much easier to make, a win win in my book!
Buckeye Balls Redone
INGREDIENTS
- 2 cups dry roasted peanuts
- 1 tablespoon honey or maple syrup
- 3/4 cup of dark chocolate chips
- 1 tablespoon coconut oil
INSTRUCTIONS
place peanuts in a food processor and process for one minute, stop and scrape down the sides. At this point the peanuts should be gritty and clumping together
Add the sweetener (honey or syrup) and process for 30 seconds to a minute more until the peanuts have turned into a pasty texture similar to thick peanut butter
Remove the ground peanuts from the food processor and wrap in waxed or parchment paper, place in refrigerator for 30 minutes
After the mixture has chilled, remove from refrigerator and roll the peanut mixture into 3/4 inch round balls
Place the chocolate chips into a microwave safe dish along with the coconut oil and heat for approximately one minute; stir and heat again at 30 second intervals until chocolate has melted.
Using a toothpick, dip the peanut butter balls into the chocolate leaving a small portion uncovered
Store in refrigerator.
