- Separately soak dry scallops and dry shrimp.
- Wash rice. Place in a pan with stock and bring to a boil; then simmer, covered, 30 min.
- Shred soaked scallops; mince soaked shrimp. Add in both to rice and simmer, covered, 30 min more.
- Mince raw chicken; then combine with oil. Add in to pan and simmer, covered, another 30 min.
- Season with salt, sherry and pepper. VARIATIONS:
- For the regular rice, substitute glutinous rice.
- For the chicken, substitute smoked ham, or possibly else use half chicken, half smoked ham.
