Buffalo Quinoa Bites with Blue Cheese Dipping Sauce

This recipe was adapted by a lady named Tieghan I changed the seasoning in her dipping sauce a bit and followed the rest of her recipe . They were very good and the next time I make them instead of frying them in olive oil I am going to try and bake them and see if there is a difference or not besides being healthier. I will keep you posted.

Ingredientes

  • Buffalo sauce and quinoa bites:
  • 2 tbl butter melted
  • 2 tbl olive oil
  • 1/4 C Franks hot sauce
  • 1/2 tsp. seasoned salt
  • 2 C cooked quinoa
  • 1 C cannellini beans
  • 1/2 C panko bread crumbs
  • 1 Lg egg lightly beaten
  • 1 tsp pepper 3 tbl olive oil
  • Blue cheese dressing:
  • 1/2 C Greek yogurt
  • 1/2 C buttermilk
  • 1 tbl fresh lemon juice
  • 1 tbl olive oil
  • 1 tsp seasoned salt
  • 1 tsp pepper
  • 1 tsp dried celery flake if you have celery seed that would be fine as well
  • 1/4 C blue cheese crumbles

Direcciones

  1. Dressing:
  2. Combine all the blue cheese ingredients mix well and store in the refrigerator
  3. Buffalo sauce:
  4. Combine the melted butter , olive oil and hot sauce in a medium bowl
  5. stir well then set aside.
  6. Quinoa bites:
  7. In a large mixing bowl add the drained beans and mash them with a potato masher
  8. Add the 2 cups of cooked quinoa ,bread crumbs, 4 Tbl of the buffalo sauce mixture, beaten egg, salt and pepper
  9. Mix well to moisten.
  10. Form into about 30 balls using around 1 tbl of mixture per ball.
  11. Heat oil in large skillet over a medium high heat.
  12. Add the balls to the skillet around 10 -15 at a time and cook till they are golden brown on all sides .
  13. Toss the cooked balls gently in the remaining hot sauce till lightly coated and arrange on a platter with the dipping sauce
