- Place the bulgur wheat in a large bowl, add in the boiling water and leave to soak for 30 min, stirring occasionally with a fork, till the water has been absorbed.
- In a mixing bowl, whisk together the oil, lemon juice and seasoning.
- Pour oil mix over the bulgur wheat, add in the herbs and mix well.
- Then fold in the remaining ingredients. Cover and refrigeratetill required.
- Serve garnished with lime wedges.
- Serves 4 - 6.
- Oil-cured black olives can also be added to this salad just before serving, if desired.
