Bulghur And Chick Pea Salad

Ingredientes

  • 250 gm Bulgar wheat, (8oz)
  • 1 x 432 gram can chick-peas, (15 1/4oz)
  • 1/2 x A cucumber, minced
  • 75 gm Unsalted peanuts, shelled (3oz)
  • 4 Tbsp. Freshly minced chives
  • 2 Tbsp. Natural yogurt
  • 2 Tbsp. Extra virgin olive oil
  • 1/2 x A lemon, juice of
  • 1 tsp Curry pwdr
  • 1 x Clove garlic, crushed

Direcciones

  1. Soak the bulgar wheat in hot water for 30 min.
  2. Drain it and squeeze it dry thoroughly. Put it in a bowl.
  3. Drain the chick-peas, and add in these and the cucumber, peanuts and herbs to the wheat.
  4. Beat together the remaining ingredients and fold them into the salad.
