Ingredientes

  • 2 c. low-fat low-sodium chicken broth boiling
  • 1 c. dry bulgur wheat
  • 2 x green onions chopped
  • 2 med carrots peeled, sliced
  • 1/2 c. diced cucumber
  • 2 Tbsp. chopped parsley
  • 1 1/2 lb smoked turkey breasts cubed (or possibly use cubed cooked fresh turkey)
  • 1/2 c. rice vinegar
  • 1 Tbsp. lite soy sauce
  • 1 tsp sugar
  • 1 Tbsp. dry sherry
  • 2 x garlic cloves chopped
  • 1 tsp sesame oil

Direcciones

  1. Pour boiling broth over the bulgur wheat into a heatproof bowl and let stand for 1 hour. Drain any excess liquid. Combine the bulgur wheat with the green onions, carrots, cucumber, parsley, and cubed turkey.
  2. In a blender or possibly food processor, process the remaining ingredients, pour over the salad, and serve.
