Bulgur Wheat Stuffed Tomato

Ingredientes

  • 1 c. Fine-grain bulgur wheat
  • 1 Tbsp. Extra virgin olive oil
  • 1/2 c. Minced onions
  • 1/2 c. Minced red delicious apple (toss in lemon juice to prevent browning)
  • 4 x Beautiful ripe tomatoes hollowed out
  • 2 Tbsp. Finely-minced tomato pulp from above
  • 1/2 c. Minced parsley
  • 1/3 c. Minced walnuts
  • 1/4 c. Minced mint
  • 2 Tbsp. Lemon juice
  • 1 tsp Lemon zest
  • 1 1/2 tsp Cumin
  • 1 1/2 tsp Coriander Salt to taste Freshly grnd black pepper to taste Greens

Direcciones

  1. Rinse the bulgur wheat in a sieve and place in a bowl, covered with cold water. Let stand for 30 min, drain excess liquid.
  2. Meanwhile, heat the extra virgin olive oil in a small saute/fry pan, add in the onions and apple and cook for 2 min. Hollow out the tomatoes to make room for the salad (reserving 2 Tbsp. of the pulp). In a large mixing bowl, combine the bulgur wheat, onions, apples, minced tomato innards, and all the remaining ingredients (except greens); blend well. Adjust the seasonings. Chill overnight and check seasonings before you fill the tomatoes. Serve on greens.
