%20%20If%20you%20have%20access%20to%20andouille%20sausage,%20sub%20that.%20%20I%20also%20think%20a%20(very)%20smoked%20sausage%20would%20work.%20%20%20Guilt%20eased.%3C/p%3E%3Cp%3EA%20little.%3C/p%3E%3Cp%3ESee,%20I'm%20on%20the%20fence%20because%20blackening%20is%20so...I%20don't%20know.%3C/p%3E%3Cp%3ESo.%3C/p%3E%3Cp%3EChef%20Paul%20Prudhomme,%20bless%20his%20heart,%20started%20burning%20blackening%20redfish%20in%20the%20early%201980s.%20%20And%20it%20spread%20like%20smoky,%20spicy%20wildfire%20across%20the%20country.%3C/p%3E%3Cp%3EYou%20know%20two%20sides%20to%20a%20coin,%20every%20rose%20having%20its%20thorn%20and%20all%20that?%3C/p%3E%3Cp%3EWell,%20this%20human%20feeding%20frenzy%20on%20reds%20is%20thought%20by%20some%20to%20have%20caused%20depletions%20in%20redfish%20populations.%20%20So%20much%20so%20that%20the%20Louisiana%20legislature%20had%20to%20pass%20fishing%20restrictions.%20%20Although%20the%20LSU%20AGCenter%20notes%20that%20redfish%20populations%20were%20declining%20slightly%20before%20the%20blackened%20redfish%20trend.%20%20We%20all%20know%20through%20various%20newsworthy%20events%20(and%20may%20even%20be%20tired%20of%20hearing%20about%20them)%20the%20kind%20of%20damage%20humankind%20can%20do%20to%20our%20beloved%20Gulf%20of%20Mexico.%20%20And%20I'm%20not%20normally%20one%20to%20rant%20and%20beat%20my%20chest%20over%20terribly%20serious%20topics%20here.%20%20But%20I%20can't%20help%20but%20find%20it%20unsettling--the%20idea%20that%20the%20proverbial%20%22we%22%20pigged%20out%20on%20blackened%20redfish%20so%20much%20that%20it%20may%20have%20been%20destructive%20to%20their%20populations.%3C/p%3E%3Cp%3EMy%20big%20issue%20with%20blackening,%20though--all%20about%20image,%20baby.%20%20When%20the%20blackening%20craze%20was%20at%20maximum,%20people%20far%20and%20wide%20thought%20that%20this%20is%20what%20Cajuns%20eat.%20%20Everyday.%20%20All%20the%20time.%20%20People%20started%20blackening%20everything%20under%20the%20sun--tuna,%20tilapia,%20shrimp,%20chicken,%20venison,%20each%20other.%20%20People%20thought%20that%20this%20was%20real%20Cajun%20food,%20cher.%3C/p%3E%3Cp%3EBlack,%20burnt-looking,%20super%20spicy%20food%20indicative%20of%20Cajun%20cooking?%20%20Wrong,%20wrong,%20wrong.%20%20If%20you've%20been%20around%20here%20for%20a%20while,%20you%20know%20it%20gets%20under%20my%20skin%20how%20people%20equate%20Cajun%20with%20taste%20bud%20killing%20spiciness.%20%20Or%20food%20becomes%20%22Cajun%22%20just%20because%20it%20has%20some%20hot%20sauce%20on%20it.%3C/p%3E%3Cp%3EBut,%20doggit,%20the%20proof's%20on%20the%20plate.%20%20And%20the%20truth%20is:%20plates%20get%20cleaned%20when%20something%20blackened%20is%20on%20them.%3C/p%3E%3Cp%3EImportant:%20Blackening%20should%20be%20done%20outside.%20%20Unless%20you%20want%20every%20smoke%20detector%20in%20the%20place%20whining%20at%20you%20and%20every%20scrap%20of%20fabric%20smelling%20like%20a%20spice%20factory%20fire%20for%20days%20afterwards.%3C/p%3E%3Cp%3EI%20don't%20know.%20%20Maybe%20you're%20into%20those%20kinds%20of%20things.%3C/p%3E%3Cp%3EKinky.%3C/p%3E%3Cp%3EAlso%20important:%20Blackening%20requires%20super%20high%20heat.%20%20So%20you'll%20need%20to%20use%20a%20pan%20that%20can%20tolerate%20it.%20%20Cast%20iron%20is%20best%20and%20is%20traditionally%20used.%20%20(Although,%20let%20me%20stress%20again:%20blackening%20is%20not%20traditional.)%EF%BB%BF%3C/p%3E%3Cp%3EThis%20was%20my%20inspiration%20for%20the%20sauce,%20along%20with%20my%20leftover%20tasso.%3C/p%3E%3Cp%3EI%20use%20Creole%20mustard%20in%20as%20many%20things%20as%20possible.Saute%20some%20onion,%20bell%20pepper,%20garlic,%20and%20finely%20diced%20tasso.%20%20Add%20Creole%20mustard%20&%20cream.%20%20Season%20to%20taste%20and%20allow%20to%20simmer.%3C/p%3E%3Cp%3EOn%20to%20the%20blackening%20seasoning.%20%20Sure,%20you%20can%20buy%20it.%20%20I%20won't%20judge%20you%20either.%20%20But%20I%20like%20to%20control%20everything%20things.%20%20I%20also%20like%20to%20make%20use%20of%20what's%20in%20my%20spice%20cabinet%20rather%20than%20cramming%20another%20jar%20into%20it.%3C/p%3E%3Cp%3EThis%20is%20a%20standard%20blackening%20seasoning.%20%20I'll%20tell%20you%20a%20little%20secret.%20%20The%20secret%20behind%20how/why%20blackening%20seasoning%20works.%20%20It's%20all%20in%20the%20paprika.%3C/p%3E%3Cp%3ESet%20a%20pan%20over%20high%20heat%20while%20you%20work%20on%20the%20chicken.%3C/p%3E%3Cp%3EImportant%20too:%20whatever%20you're%20blackening,%20it%20can't%20be%20too%20thick.%20%20The%20outside%20will%20burn%20before%20the%20inside%20is%20cooked%20through.%20%20I%20sliced%20the%20chicken%20breasts%20into%20tenders%20to%20make%20sure%20this%20wouldn't%20happen.%20%20You%20could%20also%20halve%20them%20horizontally.%3C/p%3E%3Cp%3EBrush%20the%20chicken%20on%20both%20sides%20with%20melted%20butter%20and%20dredge%20in%20blackening%20seasoning.%20%20Press%20the%20seasoning%20into%20the%20chicken.%3C/p%3E%3Cp%3EMy%20pot%20has%20been%20sitting%20over%20high%20heat%20getting%20white%20hot.%20%20Well,%20as%20white%20hot%20as%20a%20black%20cast%20iron%20pot%20can%20get.%20%20Ideally,%20a%20skillet%20would%20be%20better.%20%20I'm%20thinking%20Christmas,%20maybe?%3C/p%3E%3Cp%3EDrizzle%20a%20little%20melted%20butter%20where%20you'll%20place%20the%20chicken%20pieces%20and%20have%20at%20it.%20%20But%20step%20aside%20quickly.%20%20Two%20words:%20smoke%20inhalation.%3C/p%3E%3Cp%3ECook%20the%20chicken%20on%20one%20side%20until%20nice%20and%20blackened%20and%20flip.%20%20Repeat%20on%20the%20second%20side.%20%20If%20you%20have%20to%20cook%20in%20batches,%20keep%20what's%20cooked%20in%20a%20warm%20oven%20until%20serving.%3C/p%3E%3Cp%3EPlate%20up,%20sauce%20up,%20allons%20manger!%3C/p%3E%3Cp%3E~MM%3C/p%3E%3Cp%3EFor%20the%20sauce:%3C/p%3E%3Cp%3ECombine%20all%20spices.%20%20Store%20in%20an%20airtight%20container.%20%20Makes%20about%201/3%20cup.%3C/p%3E){kind=link}
