Receta Butter and Flour Free Chocolate Cake

This contains chickpeas which might sound strange but actually works really well! It doesn't taste particularly 'chickpea'-like and is still incredibly moist despite having no butter.

You can easily make this completely gluten-free by using gluten-free baking powder too.

This was made in an 8" square tin.

  1. Mash or blend the chickpeas as much as possible.
  2. Beat in the eggs til smooth.
  3. Mix in the sugar and baking powder.
  4. Pour in the melted chocolate and mix well.
  5. Transfer to a 8-inch cake tin and bake at 175 degrees C for about 40 minutes.

      Doesn't sound strange at all, I've been making a very similar version of this for years (mine uses cocoa instead of the melted chocolate and a splash of orange juice to help the baking powder rise a bit). And I wizz my chickpeas in a food processor to puree them, but this is basically the same thing. It really does taste like fudgy brownies, people are always amazed that there's no flour in these...and they're so healthy, too!

                    You're welcome! Hm, I'm not sure actually, if you were wanting to make it less chocolately-tasting, perhaps subbing in half amount of puréed fruit like raspberry or strawberry? Or if you're wanting to cut back on the fat/sugar content, then perhaps sub in some healthier olive oil?

                    However, I'm not entirely sure that either would work because it might be messing up the structure of the cake a bit - but you've now given me inspiration to play around this recipe so I'll post up an alternative recipe soon if the experimentation goes well!

                    Hi Catherine, yeh I tested this on my hungry aikido guys yesterday and they all wolfed it down! I think this was my first (successful) attempt at flourless cake so would love to see what recipes you have if you've got any to share!

                        Thanks Lauren, yes I thought it was really strange when I first heard of it but it actually does taste quite chocolatey and not too much of chickpeas :-)
