  • 1 quart buttermilk
  • 3 Tbsp. cornmeal maple syrup

  1. Heat the buttermilk over low heat in a large skillet, stirring constantly to keep itfrom separating into curds and whey. Just before the buttermilk boils, sift in thecornmeal, stirring till the mix thickens and the raw corn taste disappears.
  2. Serve with maple syrup.
