%20than%20sitting%20in%20front%20of%20my%20computer%20screen%20after%20a%20long%20day%20of%20work%20and%20meeting%20deadlines%20to%20write%20eloquently%20and%20persuasively%20about%20a%20delicious%20and%20tempting%20new%20recipe%20you%20have%20to%20try.%20However,%20with%20the%20holidays%20and%20crazy%20deadlines%20behind%20me%20and%20a%20new%20year%20full%20of%20potential%20ahead,%20I%E2%80%99m%20ready%20to%20get%20back%20to%20a%20consistent%20posting%20groove.%20I%20hope%20you%20will%20stick%20with%20me%20in%20this%20new%20year%20of%20recipes%20and%20life!%3C/p%3E%3Cp%3ESo,%20to%20kick%20off%20the%20year,%20let%E2%80%99s%20start%20big!%20As%20you%20know,%20I%20love%20risotto!%20It%20is%20one%20of%20my%20favorite%20cold-weather%20comfort%20foods%20and%20so%20versatile%20because%20you%20can%20throw%20almost%20anything%20into%20risotto.%20I%E2%80%99m%20always%20looking%20for%20new%20ideas%20of%20how%20to%20make%20risotto%20different%20and%20delicious;%20my%20most%20recent%20inspiration%20came%20from%20a%20surprising%20place.%20A%20week%20before%20Christmas,%20I%20was%20on%20the%20treadmill%20at%20the%20gym,%20trying%20to%20run%20the%20work-stress%20out%20of%20my%20body,%20and%20one%20of%20the%20gym%20staff%20members%20changed%20the%20channel%20of%20the%20TV%20hanging%20in%20front%20of%20my%20treadmill.%20Normally,%20they%20have%20the%20news%20and%20Sports%20Center%20on%20all%20the%20TVs.%20(I%20actually%20don%E2%80%99t%20mind%20watching%20basketball%20or%20baseball%20games%20on%20TV%20when%20I%E2%80%99m%20treadmilling%20it.%20It%E2%80%99s%20a%20good%20motivator%20to%20keep%20going.)%20But,%20this%20guy%20changed%20it%20to%20the%20Nate%20Berkus%20show.%20I%E2%80%99d%20never%20even%20heard%20of%20the%20show,%20but%20it%20caught%20my%20attention%20because%20I%20recognized%20his%20guest%E2%80%A6Michael%20Chiarello.%20Will%20and%20I%20love%20Michael%20Chiarello%E2%80%99s%20restaurant%20Bottega%20in%20Yountville%20and%20his%20former%20restaurant%20Tra%20Vigne%20in%20St.%20Helena.%20So,%20of%20course,%20I%20was%20hooked!%20Michael%20was%20showing%20Nate%20Berkus%20and%20the%20audience%20how%20to%20make%20a%20dip%20that%20Will%20and%20I%20have%20been%20trying%20to%20figure%20out%20how%20to%20make%20for%20months%20(look%20for%20more%20on%20that%20in%20a%20later%20post!),%20but%20then%20he%20turned%20to%20making%20butternut%20squash%20risotto.%20Oh%20my%20goodness!%20I%20was%20ready%20to%20leave%20the%20gym%20early%20and%20go%20home%20to%20make%20it%20right%20away.%20However,%20I%20did%20finish%20my%20workout.%20And,%20we%20ended%20up%20making%20the%20butternut%20squash%20risotto%20with%20my%20family%20a%20week%20later.%20The%20butternut%20squash%20is%20full%20of%20flavor%20and%20surprisingly%20light,%20enhanced%20by%20its%20combination%20with%20the%20fontina%20cheese%20and%20sage%20in%20the%20risotto.%20It%20does%20take%20a%20little%20bit%20of%20time%20to%20make%20this,%20as%20you%20need%20to%20prepare%20the%20butternut%20squash%20prior%20to%20starting%20the%20risotto,%20but%20it%E2%80%99s%20well%20worth%20your%20time.%20For%20the%20roasted%20squash,%20I%20actually%20halved%20the%20recipe%20for%20the%20seasoning%20mixture,%20as%20the%20first%20time%20we%20made%20this,%20the%20mixture%20on%20top%20became%20scorched%20and%20we%20scraped%20it%20off.%20The%20halved%20version%20turned%20out%20perfectly%20though.%20My%20altered%20version%20is%20below.%20Everyone%20loved%20this%20dish,%20and%20I%20will%20definitely%20be%20making%20this%20recipe%20regularly%20during%20the%20fall%20and%20winter.%20I%20hope%20you%20enjoy%20it%20as%20much%20as%20we%20do!%3C/p%3E%3Cp%3EButternut%20Squash%20and%20Fontina%20Val%20d%E2%80%99Aosta%20Risotto%3C/p%3E%3Cp%3EAdapted%20from%20Michael%20Chiarello%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ERoasted%20Squash%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EFor%20the%20squash:%20Preheat%20the%20oven%20to%20350F.%20Line%20a%20baking%20sheet%20with%20aluminum%20foil.%20Put%20the%20squash%20chunks%20into%20a%20large%20bowl.%3C/p%3E%3Cp%3EHeat%20a%20large%20saut%C3%A9%20pan%20or%20skillet%20over%20medium-high%20heat%20and%20melt%20the%20butter%20until%20it%20foams%20and%20begins%20to%20brown.%20Add%20the%20sage%20(or%20the%20garlic,%20one%20or%20the%20other%20but%20not%20both),%20followed%20by%20the%20vinegar%20and%20brown%20sugar.%20Stand%20back,%20as%20the%20mixture%20may%20spatter.%20Season%20with%20salt%20and%20pepper%20and%20simmer%20for%201%20to%202%20minutes%20to%20meld%20the%20flavors,%20stirring%20gently%20to%20dissolve%20the%20sugar.%20Pour%20the%20mixture%20over%20the%20squash%20and%20toss%20well.%3C/p%3E%3Cp%3EArrange%20the%20squash%20on%20the%20prepared%20pan,%20cover%20with%20aluminum%20foil,%20and%20bake%20until%20very%20tender%20and%20caramelized,%20about%2040%20minutes.%20Remove%20the%20foil%20and%20increase%20the%20oven%20temperature%20to%20425%C2%BAF%20for%205%20minutes%20to%20caramelize%20the%20squash%20further.%20Remove%20from%20the%20oven%20and%20baste%20the%20squash%20with%20the%20liquid%20in%20the%20pan.%20Let%20cool%20briefly,%20then%20puree%20in%20a%20food%20processor%20until%20creamy.%20For%20the%20risotto:%20In%20a%20medium%20saucepan,%20bring%20the%20stock%20to%20a%20boil%20over%20high%20heat.%20Reduce%20the%20heat%20to%20low%20and%20keep%20it%20at%20the%20barest%20simmer%20while%20you%20make%20the%20risotto.%3C/p%3E%3Cp%3EFor%20the%20risotto:%20Heat%20a%20large%20saut%C3%A9%20pan%20or%20heavy%20medium%20saucepan%20over%20medium%20heat,%20add%20the%20olive%20oil,%20and%20cook%20the%20onion%20until%20soft,%20about%2010%20minutes.%20Add%20the%20rice%20and%20the%20minced%20garlic%20and%20cook,%20stirring%20frequently,%20until%20the%20rice%20is%20pearly%20white%20with%20a%20translucent%20outer%20layer.%20Add%20the%20wine%20and%20cook,%20stirring,%20until%20very%20little%20liquid%20is%20left%20in%20the%20pan.%20Ladle%20in%201%20cup%20of%20the%20hot%20stock.%20Reduce%20the%20heat%20to%20medium-low,%20keep%20the%20rice%20at%20a%20gentle%20simmer,%20while%20stirring%20frequently,%20until%20almost%20all%20the%20liquid%20is%20gone.%20Ladle%20in%201/2%20cup%20of%20the%20hot%20stock%20and%20repeat,%20ladling%20in%201/2%20cup%20of%20stock%20each%20time%20most%20of%20the%20liquid%20has%20been%20absorbed.%20All%20together,%20counting%20from%20the%20first%20cup%20of%20stock,%20you%E2%80%99ll%20stir%20and%20cook%20for%20about%2018%20to%2025%20minutes.%20Taste%20the%20rice%20to%20decide%20when%20it%E2%80%99s%20done:%20it%20should%20be%20creamy,%20firm%20in%20the%20center%20but%20without%20any%20hint%20of%20crunch.%20Stir%20in%20the%20butternut%20mixture,%20remove%20from%20the%20heat,%20and%20stir%20in%20the%20shredded%20sage%20and%20the%20fontina.%20Serve%20and%20enjoy!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
