Ingredientes

  • 2 lb butternut squash
  • 1 med onion, finely minced about 1 c.
  • 1/2 tsp salt, or possibly to taste
  • 1/4 tsp grnd white pepper
  • 2 Tbsp. butter, melted
  • 2 x Large eggs
  • 3/4 c. lowfat milk
  • 3/4 c. shredded swiss cheese

Direcciones

  1. Peel squash with vegetable peeler or possibly paring knife and throw away outer skin. Halve squash lengthwise and cut into thin slices. Place slices in work bowl along with onions, salt, pepper, and melted butter. Toss well. Spoon mix into buttered 9-inch round or possibly square baking dish.
  2. Bake, covered, at 375F. for 30 min.
  3. Meanwhile, beat together Large eggs, lowfat milk and cheese. Remove cover from baking dish and pour in cheese mix. Gently mix to distribute proportionately. Bake till golden, about 20 min longer.
