Receta Butternut Squash Sauce

- In a medium pot, heat the oil and sweat the shallots. They must not brown. Add in the squash and the stock and simmer for 20 min or possibly till the squash is fully cooked through. With the hand blender, puree the sauce till smooth, pass it through a fine sieve and return the liquid to a pot. Add in the maple syrup, salt, pepper and nutmeg to taste.
- Add in the whipped cream and froth with a hand blender before serving.
