Receta Cajun Burger with Sautéed Sweet Onions & Sauce Remoulade
by Karista

This Cajun Burger with Sautéed Sweet Onions & Sauce Remoulade is going to make your taste buds dance with happiness!  Seriously, this is the juiciest, most flavorful burger I’ve created yet. It’s a deeply flavored burger, but it tastes even better when I add the sautéed sweet onions and sauce remoulade. Because who doesn’t love sautéed onions and sauce remoulade? Not to mention, I paired this flavorful burger with Hawaiian sweet bread buns for the win! I’m proud to say, every last morsel of these burgers were joyfully eaten by my Bennett Crew. Oh how this makes my mom and chef heart smile. I created this gorgeous and festive Cajun Burger with Sautéed Sweet Onions & Sauce Remoulade for one of my favorite clients,  Yao Ming Family Wines. We paired the burger recipe with their 2015 Cabernet Sauvignon. The wine is layered with berry flavors of cherry, cassis and plum and it sips lush and firm on the palate. This is pure festive, summer food prepared with fresh, local ingredients. Except for the bun of course. Sometimes I have to deviate from my food plan and just dive right into something indulgent like this burger. Because what is life without a bit of indulgence? Combined with fun visits from my two sassy college gals, who are working hard at “adulting” – according to my youngest, mountain and coastal hikes with the Gus Gus, summer reading and client work – like this burger of course, summer is off to a delicious start! Summer hike with my two gals and the Gus Gus   Wishing you a most delicious and fun-filled holiday! Loads of love, Karista Print Cajun Burger with Sautéed Sweet Onions & Sauce Remoulade Serving Size: Makes 6 burgers A juicy and flavorful hamburger created with both ground beef and ground sweet Italian sausage. It’s filled with Cajun spices and fresh aromatics and then served with sautéed sweet onions and a spicy New Orleans Remoulade. To complete this gorgeous burger, it’s then placed on a Hawaiian Sweet Bun which compliments the spicy flavors of the burger. A playful and delicious twist on the traditional summer hamburger. Ingredients For the burger 1-pound ground beef ½ pound ground sweet Italian sausage 1-2 teaspoons of Cajun seasoning (depending on how spicy the seasoning) ½ cup finely diced or minced green pepper 2 green onions, finely diced or minced 1-2 cloves garlic, minced 1 tablespoon Worcestershire sauce 1 tablespoon prepared horseradish ½ cup panko breadcrumbs ¼ cup whole milk, warm For the sautéed sweet onions 1 large sweet onion, halved and thinly sliced 2 tablespoons butter ½ teaspoon salt For the remoulade 1 cup mayonnaise ¼ cup chili sauce 1 clove garlic, minced 1 tablespoon capers, finely diced 1 -2 teaspoons Cajun seasoning (depending on spiciness) 1-2 tablespoons lemon juice ¼ cup finely diced green onion 1 teaspoon prepared horseradish 1 teaspoon Worcestershire sauce 1 tablespoon chopped fresh parsley Dash of hot sauce For the Burger Hawaiian Sweet Buns or Potato Buns (the sweet buns taste amazing with this burger) Tomato slices Fresh lettuce leaves Instructions Prepare the remoulade. In a small bowl combine the mayonnaise, chili sauce, garlic, capers, Cajun seasoning, lemon juice, green onions and horseradish. Set aside. Prepare the sautéed sweet onions. In a sauté pan over medium low heat, add the butter. When the butter is melted add the sliced sweet onions. Sauté the onions until golden brown and slightly caramelized. Then take them off the heat and season with salt. Prepare the Cajun burgers. In a large bowl, gently combine the ground beef and the ground Italian sausage. Then add the Cajun seasoning, green pepper, green onion, garlic, Worcestershire sauce and horseradish and gently combine. Don’t overwork the meat. Add the Panko breadcrumbs to a bowl and mix in the warm milk. Mix this into the burger mixture until well distributed. But be careful not to over work the mixture or the burgers will be tough. Pre-heat the grill to 400F. Make six hamburger patties and then brush them with olive oil or a vegetable oil. Sprinkle with a little salt and pepper. Place the patties on the grill and cook for about 3-4 minutes each side for medium or 5-6 minutes each side for well done. You should see nice grill marks or nicely browned color on each side. I like to cook my burgers to 160-165F internal temperature. Once the burgers are done, let them rest for five minutes. Then assemble the burgers by adding remoulade to both halves of the bun and placing the burger on the bottom half of the bun. Top the burger with sautéed onions, then the tomato slice and lettuce. Place the top half of the bun on top of the lettuce and serve. Enjoy!
