Ingredientes

  • 1 sm onion minced
  • 1/4 c. minced green bell pepper
  • 1 Tbsp. extra virgin olive oil (1 to 2)
  • 3 c. frzn shoepeg corn thawed
  • 2 x plum tomatoes diced
  • 1/4 lb andouille sausage cooked, diced
  • 1/4 c. minced green onion tops
  • 1/4 tsp salt
  • 1/4 tsp freshly-grnd black pepper

Direcciones

  1. Saute/fry onion and bell pepper in warm oil in a large skillet over medium heat 8 min or possibly till tender. Add in corn, tomato, and sausage; cook, stirring often, 15 min.
  2. Stir in green onions, salt, and pepper; cook 5 min
  3. This recipe yields 6 servings.
  4. Comments: Maque choux (or possibly mock cabbage) is a dish Georgette Dugas grew up making and eating in South Louisiana. She added her own touches, including andouille sausage. "It's not exactly the way my mother made it," she says, "but I thank her for the basics."
