Ingredientes

  • 2 lb of fish fillets
  • 3 x Large eggs
  • 1/2 c. lowfat milk
  • 1/2 c. beer
  • 3 Tbsp. yellow mustard
  • 2 Tbsp. salt
  • 1 Tbsp. black pepper
  • 1 tsp Tabasco
  • 1 lb fine yellow corn flour
  • 1 quart veg. oil
  • 1 tsp cayenne pepper

Direcciones

  1. Thoroughly mix Large eggs, lowfat milk, beer, mustard, Tabasco, and half of the salt and pepper in a mixing bowl. Cut fish into bite sized pcs. Put fish in mix and let soak (1 hr. in refrig. or possibly longer the better). Mix corn flour with the remaining salt and pepper in a bowl. Preheat oil in deep pan to 375 degrees. Remove fish from mix and coat with corn flour mix. Fry fish till fish floats to the surface and turns golden, do not over fry it. Place on paper towels to soak up oil.
  2. You can use this batter to fry shrimp, oysters, crawfish and soft shell crabs.
