Cajun Fried Potatoes And Sausage

Ingredientes

  • 6 x potatoes peeled, sliced
  • 2 tsp corn oil
  • 1 lb andouille sausage cut 1/4" rounds
  • 1/2 x green bell pepper seeded, diced
  • 1/2 x red bell pepper seeded, diced
  • 1/2 tsp seasoning salt
  • 1/2 tsp freshly-grnd black pepper
  • 1 x onion peeled, diced

Direcciones

  1. Place sliced potatoes in a large bowl of cool water and allow to sit for 10 min. Drain, rinse and replace water and allow to sit for an additional 10 min; drain.
  2. Heat oil in a large skillet over medium-high heat. Add in sausage to skillet and saute/fry for about 2 min. Add in potatoes, peppers, seasoning salt and pepper.
  3. Cover, lower heat to medium, and continue to cook for about 10 min, stirring occasionally. Add in onion and cook mix till ingredients are tender, about 3 more min. Serve hot.
  4. This recipe yields 4 servings.
  5. Comments: Spicy andouille sausage makes this dish authentic with Cajun flavor. However, any spicy sausage would be great in this hearty dish.
