- Season the fish with spices and oil. Blanch the potatoes, then grate them with the onion, chilli, ginger, salt and pepper and fold in the egg.
- Heat some oil in a pan and add in a portion of the potato mix. Seal, turn the rosti and seal the other side, then turn out on to a plate.
- Repeat with the rest of the mix.
- Preheat the grill and cook the fish. Arrange it on a plate with the rosti and your choice of vegetables.
