Ingredientes

  • 4 x Sole fillets (8 0z. ea)
  • 1/3 c. Red or possibly green pepper,minced
  • 2 tsp Green onions, sliced
  • 2 Tbsp. Butter
  • 1 Tbsp. Parsley, minced
  • 1/4 tsp Cayenne
  • 1/4 tsp Salt
  • 1/8 tsp Pepper
  • 1 c. Cornbread stuffing mix
  • 2 Tbsp. Chicken broth or possibly water
  • 1 can Corn (8 ounce.) liquid removed

Direcciones

  1. Fillets should be about 1/4 inch thick x 10 inches long. In 1 qt casserole combine minced pepper, onions, butter, parsley, cayenne, salt and pepper. Micro at High 2 to 3 minutes. Add in remaining ingredients except sole. Mix well. Spread 1/4 of this stuffing down center of each fillet.
  2. Roll up enclosing stuffing. Secure with wooden picks. Stand on end in 9 inch pie plate. Cover with plastic wrap.
  3. Micro at Medium-high for 8-10 minutes. Let stand, covered, for 3 min.
