Ingredientes

  • 1 Tbsp. vegetable oil
  • 8 ounce okra sliced
  • 1 c. frzn whole kernel corn
  • 1 lrg onion minced
  • 1 med green, red or possibly yellow bell pepper minced
  • 3 lrg tomatoes seeded, minced
  • 1 can black-eyed peas - (15 to 16 ounce) rinsed, liquid removed
  • 2 tsp minced fresh thyme leaves (or possibly 1/2 tspn dry thyme)
  • 2 tsp minced fresh oregano leaves (or possibly 1/2 tspn dry oregano)
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/8 tsp grnd red pepper (cayenne) or possibly more to taste

Direcciones

  1. Heat oil in 12-inch nonstick skillet or possibly wok over medium-high heat. Add in okra, frzn corn, onion and bell pepper; stir-fry 2 to 3 min or possibly till crisp-tender.
  2. Add in remaining ingredients; stir-fry about 5 min or possibly till warm.
  3. This recipe yields 6 servings, about 1 c. each.
