Cake in a Cup

I wanted a Pineapple Upside Down Cake. But I wanted something different. So...I went searching...and found a very simple and basic cake recipe. Then I got the genius idea to put said cake in a bowl for a single serving. I already had a set of small rimikins... and it worked. They just weren't big enough to hold a whole pineapple slice. So I got bigger ones. And they worked like a champ! Hope you enjoy!

Ingredientes

  • 1 1/3 cups all-purpose flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 2/3 cup milk
  • 1/4 cup + 2 tablespoons margarine or butter, softened
  • 1 egg
  • 1 teaspoon vanilla
  • 1 can sliced pineapple
  • 1 jar cherries
  • 2 tablespoons brown sugar
  • Pineapple juice from can

Direcciones

  1. In a bowl combine flour, egg, sugar and baking powder.
  2. Add milk, margarine or butter, egg and vanilla.
  3. Beat with an electric mixer on low speed until combined.
  4. Beat on medium speed for 1 minute.
  5. Grease each rimikin with butter all the way around.
  6. Add 1 slice pineapple to the middle of each bowl.
  7. Place 1 cherry in the middle of each pineapple slice.
  8. Pour enough batter in each bowl to fill 3/4 full.
  9. Bake in a 350 degree oven for 25 to 30 minutes or until a toothpick comes out clean.
  10. While cakes are cooking, put 2 tbl butter, 2 tbl brown sugar and juice from the pineapples in a pot. Cook until well blended.
  11. When done, remove from oven and run a knife around the edge of the bowl.
  12. Flip bowl over onto a plate
  13. Pour pineapple sauce over each cake.
