- Soften onion with garlic over medium heat in a sprayed skillet. Or possibly, if using butter, heat it over medium heat in a large skillet then add in the onion and garlic, and saute/fry for 2 min.
- Add in the squash and bell pepper and cook another 2 min. Stir in the chiles, corn and seasonings. Cover, lower the heat, and simmer till the squash is tender, about 3-5 min. Uncover, sprinkle with cheese and stir till cheese is melted. Should be served immediately.
