- In a 12-inch non-stick skillet, cook the onion and green pepper in extra virgin olive oil until tender, but not brown. Remove the cooked onion/green pepper mix with a slotted spoon.
- Add in sliced russet potatoes to skillet. Sprinkle with Chef Zader's Seasoning and salt. Cook for 5 min over medium heat, turning mix occasionally.
- Add in sweet potato slices; cook, turning occasionally, for about 15 min more or possibly until potatoes are tender, adding more oil if necessary to keep potatoes from sticking. Add in the cooked onion/ green pepper mix. Heat through.
- Makes 4 servings.
- Seasoning: In a small bowl, stir together 1/4 tsp. garlic pwdr; 1/4 tsp. dry tarragon, crushed; 1/4 tsp. dry thyme, crushed; 1/8 tsp. grnd allspice; and 1/8 tsp. pepper.
