Saturday was a very special day for me. My Arabian horse came home, after two years of living on a ranch in Paso Robles. It was a matter of economics, and an offer I couldn't refuse, to move her 120 miles away. "Savvy" has been well looked after and she was doing well. The problem was, I wasn't. I found myself longing to brush her, feed her carrots, nuzzle her mane and to appreciate what only a true horse person can understand-- that "equine smell" of horse sweat, with notes of mustiness and ... well, horse. .%20%20All%20I%20needed%20was%20salsa,%20but%20my%20homegrown%20tomatoes%20aren't%20ready.%20%20Pioneer%20Woman%20to%20the%20rescue!%20Fortunately,%20I%20stockpile%20canned%20tomatoes%20in%20all%20size,%20shapes%20and%20flavors.%20%20You%20need%20a%2028%20ounce%20can%20of%20tomatoes,%20a%20can%20of%20Rotel%20Tomatoes--%20which%20I%20didn't%20have.%20I%20simply%20added%20minced%20mild%20green%20chilis,%20which%20are%20a%20pantry%20staple%20in%20my%20home.%20A%20food%20processor%20makes%20this%20a%20breeze%20to%20make:%3C/p%3E%3Cp%3EYou%20also%20need%20onion,%20fresh%20jalapeno,%20fresh%20cilantro%20and%20a%20garlic%20clove.%20%20If%20you've%20never%20worked%20with%20jalapenos,%20just%20remember%20a%20few%20things--%20the%20membrane%20holds%20all%20the%20heat.%20Remove%20the%20seeds,%20too,%20and%20wash%20your%20hands!%20If%20you%20accidentally%20rub%20your%20eyes,%20you%20will%20be%20very%20sorry!%20If%20you%20hate%20cilantro%20(Chinese%20Parsley),%20leave%20it%20out.%20Thankfully,%20we%20love%20cilantro%20and%20grow%20it%20in%20my%20own%20backyard.%3C/p%3E%3Cp%3EToss%20all%20of%20your%20ingredients%20into%20the%20food%20processor.%20Add%201/4%20tsp%20of%20cumin%20(or%20more,%20if%20you%20wish),%20a%20pinch%20of%20sugar%20and%20salt,%20and%20fresh%20lime%20juice.%20%20I%20coarsely%20cut%20the%20canned%20mild%20green%20chilis%20and%20then%20pulsed%20these%20ingredients%20about%203%20times--%20we%20don't%20want%20puree!%3C/p%3E%3Cp%3ENow%20add%20the%20undrained%20tomatoes%20and%20pulse%20this%20a%20few%20more%20times.%20Taste%20with%20a%20tortilla%20chip.%20Mine%20needed%20more%20salt.%20Yummy!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20I%20see%20no%20reason%20for%20me%20to%20buy%20salsa%20in%20the%20deli%20section%20nor%20jars%20at%20the%20grocery%20store.%20%20This%20is%20much%20easier%20to%20make,%20and%20you%20can%20adjust%20the%20%22heat%22.%20%201%20whole%20jalapeno%20gave%20this%20some%20kick.%20%201/2%20jalapeno%20would%20be%20more%20my%20preference,%20but%20my%20boys%20like%20it%20hot.%20If%20you%20want%20mild,leave%20out%20the%20jalapenos,%20altogether%20but%20don't%20skip%20the%20minced%20green%20onion.%20If%20you%20have%20Rotel%20tomatoes%20(which%20are%20tomatoes%20with%20mild%20green%20chili%20peppers,%20and%20some%20seasonsings)%20that%20works,%20too.%20%20Salsa%20is%20ready.%20Next,%20you%20need%20eggs,%20a%20can%20of%20black%20beans%20(drained%20and%20rinsed),%20corn%20tortillas%20and%20cheese.%20I%20used%20Cotija%20cheese.%3C/p%3E%3Cp%3EI%20lightly%20cooked%20each%20tortilla%20in%20a%20little%20vegetable%20oil,%20until%20soft.%20Then%20I%20drained%20and%20patted%20it%20with%20paper%20towels.%3C/p%3E%3Cp%3ENow%20for%20those%20lovely%20eggs--%20sunny%20side%20up.%20%20To%20the%20black%20beans%20I%20added%20a%20bit%20of%20chicken%20stock%20to%20make%20them%20a%20little%20moist,%20%20and%20mashed%20them%20just%20a%20little%20bit--%20or,%20you%20could%20puree%20them.%20%20Since%20the%20salsa%20has%20kick%20to%20it,%20I%20didn't%20season%20the%20beans.%20Let's%20build%20it--%20layer%202-3%20corn%20tortillas.%20Next,%20some%20beans%20and%20a%20little%20bit%20of%20Cotija%20cheese.%20I%20decided%20to%20broil%20it%20for%20about%2030%20seconds,%20to%20melt%20the%20cheese.%20Next%20the%20salsa,%20then%20the%20eggs.%20%20Sprinkle%20with%20a%20little%20more%20cheese%20and%20slices%20of%20avocado.%3C/p%3E%3Cp%3EI'm%20looking%20forward%20to%20spending%20more%20time%20with%20my%20horse--%20and%20more%20fresh%20farm%20eggs%20wouldn't%20be%20so%20bad,%20either!%20%20UPDATE:%20My%20beloved%20mare%20went%20to%20her%20pasture%20in%20the%20sky,%20just%20a%20month%20after%20I%20posted%20this.%20%20I%20have%20decided%20to%20keepher%20photos%20on%20this%20post,%20in%20memory%20of%20the%20joy%20she%20brought%20into%20my%20life.%3C/p%3E%3Cp%3EHappy%20Summer!%3C/p%3E){kind=link}
