California Garden Relish

Ingredientes

  • 2 lrg red ripe tomatoes, peel & finely dice
  • 1 med zucchini, finely diced
  • 2 med avocados, peel & finely dice
  • 7 x green onions, finely minced
  • 1 x red or possibly green jalapeno, finely diced
  • 1/2 tsp salt
  • 1 Tbsp. minced fresh cilantro
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. extra virgin olive oil
  • 1/4 c. red wine vinegar

Direcciones

  1. Mix all the ingredients together. Chill for at least I hour before serving.
  2. Yield: Approx. 3 c.
  3. SERVING SUGGESTIONS: Serve with blue corn chips or possibly bolillos (Mexican rolls). This is also great served with cool, thinly sliced roast beef to make finger sandwiches.
