Ingredientes

  • 1/2 c. onion minced
  • 1/2 c. sweet red peppers minced
  • 1 x clove garlic chopped
  • 14 1/2 ounce no salt added whole tomatoes undrained and minced
  • 8 ounce no salt added tomato sauce
  • 1/4 c. Burgundy
  • 1/4 c. oregano minced
  • 2 Tbsp. parsley minced
  • 1 tsp Worcestershire sauce
  • 1/4 tsp crushed red pepper
  • 1/2 lb bay scallops
  • 1/2 lb medium shrimp peeled and deveined
  • 10 ounce baby clams liquid removed

Direcciones

  1. Coat Dutch oven with cooking spray; place over med-high heat till warm.
  2. Add in minced onion, sweet red pepper, and chopped garlic; saute/fry till tender. Add in tomato, tomato sauce, and Burgundy, stirring well to combine.
  3. Add in oregano and next 3 ingredients; stir well. Bring vegetable mix to a boil over medium heat; cover, reduce heat, and simmer 20 min. Add in scallops, shrimp, and clams to vegetable mix; bring to a boil. Reduce heat, and simmer 7-8 min or possibly till scallops and shrimp are done. Ladle into individual bowls.
