California Vegetarian Sushi

Ingredientes

  • Nori (dry seaweed)
  • 2 1/2 c. sushi rice or possibly medium-grain white rice
  • 2 1/2 c. water
  • 1/4 c. rice vinegar
  • 2 Tbsp. sugar Healthy pinch of salt Fillings (choose only 3 or possibly 4 of the following): Mushrooms Pickled ginger Carrots Cucumbers Water chestnuts Avocado Scallions Asparagus Scrambled Large eggs
  • 3 Tbsp. peanut butter
  • 2 Tbsp. lime juice
  • 1 Tbsp. soy sauce
  • 2 Tbsp. fresh cilantro, chopped
  • 1 Tbsp. toasted sesame oil
  • 1/4 c. water
  • 2 x cloves garlic, chopped

Direcciones

  1. Bring water and rice to boil. Cover, reduce heat and simmer 20 min.
  2. Remove from heat and let stand 5 min. Mix dressing ingredients with warm rice till very sticky. Spread rice over a cookie sheet to cold. Whisk together peanut dipping sauce ingredients. Serve with sushi. Follow the steps for making the California Vegetarian Rolls.
  3. Makes 6-8 rolls
