%3C/p%3E%3Cp%3EOk...so%20it's%20a%20NOT%20so%20fancy%20word%20for%20butterflying%20a%20chicken.%3C/p%3E%3Cp%3EBasically%20what%20you%20do%20is%20rinse%20and%20dry%20the%20chicken.%20Turn%20the%20chicken%20over%20on%20its%20tummy....ok....breast%20side%20down,%20and%20using%20a%20pair%20of%20kitchen%20shears,%20cut%20out%20the%20backbone.%3C/p%3E%3Cp%3EStep%20one%20accomplished.%3C/p%3E%3Cp%3EBtw...if%20you're%20into%20making%20chicken%20broths%20and%20stock,%20save%20that%20back%20bone%20for%20your%20next%20batch.%3C/p%3E%3Cp%3ENow%20we%20spread%20that%20chick%20open%20and%20proceed%20to%20remove%20the%20sternum%20by%20running%20a%20knife%20(recommended%20knife:%20pairing)%20along%20the%20edge%20of%20the%20sternum....run%20your%20thumbs%20along%20the%20cartridge%20and%20pop%20that%20baby%20out.%3C/p%3E%3Cp%3ENow....there's%20a%20flap%20of%20skin%20laying%20over%20each%20thigh......using%20your%20pairing%20knife,%20cut%20a%20little%20hole,%20about%20an%20inch%20long%20in%20the%20skin,%20then%20insert%20the%20end%20of%20each%20leg%20into%20a%20hole.%20Turn%20the%20bird%20over%20and%20snip%20off%20the%20tips%20of%20the%20wings.%3C/p%3E%3Cp%3EAnd%20there%20you%20have%20it.%20A%20spatchcock.%3C/p%3E%3Cp%3EPersonally,%20I'd%20rather%20say%20I%20butterflied%20the%20damn%20thing.%3C/p%3E%3Cp%3EThe%20purpose%20of%20going%20to%20all%20this%20trouble?%20It%20speeds%20up%20the%20grilling%20time.%3C/p%3E%3Cp%3ENow%20lets%20get%20cooking.%3C/p%3E%3Cp%3ECambodian%20Grilled%20Chicken%3C/p%3E%3Cp%3EMarinade%3C/p%3E%3Cp%3EDo%20you%20have%20a%20mortar%20and%20pestle?%20If%20not....just%20use%20a%20mini%20food%20processor%20or%20something.%3C/p%3E%3Cp%3ETo%20make%20the%20marinade:%3C/p%3E%3Cp%3EPlace%20the%205%20cloves%20of%20garlic,%20sugar%20and%20salt%20in%20your%20mortar.%20Pound%20away%20until%20you%20have%20a%20smooth%20paste%20(it%20smells%20amazing!).%20It%20only%20takes%20a%20minute.%20Seriously...it's%20quick%20and%20easy.%20Add%20in%20the%20soy%20sauce%20and%20fish%20sauce%20(in%20my%20case,%20I%20omitted%20the%20fish%20sauce%20and%20used%20more%20soy%20sauce%20due%20to%20allergies)%20and%20work%20it%20together.%20Pour%20over%20the%20chicken%20and%20rub%20it%20in%20good....getting%20it%20all%20over.%3C/p%3E%3Cp%3ECover%20the%20chicken%20and%20refrigerate%20for%201%20to%204%20hours.%20(I%20highly%20recommend%20the%204%20hours%20if%20you%20have%20the%20time....the%20flavor%20will%20be%20more%20intense)%3C/p%3E%3Cp%3EFor%20the%20glaze:%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20small%20saucepan,%20over%20a%20medium%20heat.%20Add%20the%20gently%20crushed%20garlic%20and%20cook%20for%20about%20a%20minute....until%20the%20garlic%20just%20begins%20to%20brown.%20Remove%20the%20garlic%20with%20a%20slotted%20spoon%20and%20place%20in%20a%20heat%20proof%20bowl.%20Add%20the%20annatto%20seeds%20to%20the%20oil%20in%20the%20sauce%20pan%20and%20cook%20for%20about%202%20minutes...until%20fragrant%20and%20brown.%20Strain%20the%20oil%20over%20the%20bowl%20with%20the%20garlic%20and%20set%20aside%20until%20ready%20to%20grill.%3C/p%3E%3Cp%3EIf%20you're%20using%20paprika%20powder%20instead%20of%20annatto%20seeds,%20then%20remove%20the%20oil%20from%20the%20heat...add%20the%20paprika%20and%20pour%20into%20the%20bowl%20with%20the%20garlic.%3C/p%3E%3Cp%3EOnce%20the%20chicken%20is%20ready%20to%20grill....or%20maybe%20when%20you're%20ready%20to%20grill%20the%20chicken...heat%20the%20grill%20to%20medium.%20You%20can%20either%20use%20direct%20or%20indirect%20heat....depending%20on%20how%20you%20like%20to%20roll.%20I%20think%20Sir%20Sportsalot%20is%20all%20about%20direct%20heat.%20I'm%20convinced%20indirect%20heat%20would%20be%20a%20better%20choice.%3C/p%3E%3Cp%3EDiscard%20any%20excess%20marinade.%20Brush%20and%20oil%20the%20grill%20grate.%20During%20the%20last%2010%20minutes%20of%20grilling,%20brush%20the%20chicken%20with%20the%20glaze,%20on%20both%20sides.%20Grill%20for%2012%20-%2020%20minutes%20per%20side%20or%20until%20the%20meat%20is%20done%20(ie:%20meat%20thermometer%20reads%20170'%20F,%20the%20juices%20run%20clear....you%20know%20the%20drill).%3C/p%3E%3Cp%3ELet%20the%20chicken%20rest%20a%20bit%20before%20serving.%3C/p%3E%3Cp%3ENow...this%20recipe%20also%20includes%20a%20%22dip%22.%20I%20didn't%20care%20for%20it,%20but%20just%20in%20case%20you%20want%20the%20full%20experience%20and%20to%20be%20able%20to%20judge%20for%20yourself....here's%20the%20dip:%3C/p%3E%3Cp%3E1%20teaspoon%20salt%3C/p%3E%3Cp%3E1%20teaspoon%20pepper%3C/p%3E%3Cp%3E1/2%20teaspoon%20sugar%3C/p%3E%3Cp%3E4%20tablespoons%20fresh%20squeezed%20lime%20juice%3C/p%3E%3Cp%3ECombine%3C/p%3E%3Cp%3ENow...this%20is%20not%20a%20pretty%20picture.%20The%20skin...I%20don't%20know%20what%20happened%20to%20it.%20But%20it's%20almost%20all%20gone%20(and%20I%20love%20grilled%20chicken%20skin,%20so%20you%20can%20imagine%20my%20disappointment).%20I%20think%20this%20may%20have%20been%20the%20result%20of%20direct%20heat%20(and%20indirect%20attention).%20But%20still....the%20chicken%20was%20extremely%20tender%20and%20had%20great%20flavor.%3C/p%3E%3Cp%3ESooo...I%20made%20it%20again.%20Only%20this%20time%20I%20used%20bone-in,%20skin%20on,%20chicken%20thighs%20(it's%20what%20I%20had%20on%20hand)%20and%20baked%20the%20thighs%20in%20a%20350'%20oven%20for%20about%20an%20hour%3C/p%3E%3Cp%3ESure...there's%20not%20a%20single%20grill%20mark.%20I%20know....it%20doesn't%20have%20that%20smokey%20grilled%20flavor.%20But%20guess%20what?%20If%20it's%20winter%20and%20you%20can't%20grill,%20or%20maybe%20you%20don't%20own%20a%20grill,%20or%20what%20if%20you%20live%20in%20an%20apartment....well,%20this%20here%20is%20your%20alternative.%20It%20totally%20works%20and%20is%20still%20a%20wonderful%20dish.%3C/p%3E){kind=link}
