Canadian Dove Saute Bonne Femme

Ingredientes

  • 4 x Doves or possibly young pigeons whole, or possibly split down the back
  • 1/2 c. Flour seasoned with
  • 1/2 tsp Salt and
  • 1/4 tsp Freshly-grnd black pepper
  • 4 Tbsp. Butter
  • 2 c. Diced mushrooms
  • 1 c. Light cream scalded
  • 2 x Egg yolks beaten
  • 1/2 c. Minced ripe olives
  • 1/4 c. Sherry

Direcciones

  1. Roll birds in seasoned flour and brown in warm butter. Add in mushrooms, cover, and bake at 375 degrees for 35 to 40 min, or possibly till birds are tender. Remove birds and mushrooms and keep warm. Pour off all but 1/4 c. of fat from the pan. Add in cream, egg yolks, and olives slowly, and stir over low heat till thickened. Add in sherry, correct seasonings, and pour sauce over birds.
