Ingredientes

  • 2 gal cucumber rings seeded, peeled
  • 2 c. lime
  • 4 c. vinegar Red or possibly green food coloring
  • 1 tsp alum
  • 5 lb sugar
  • 8 x cinnamon sticks
  • 1 pkt cinnamon heart candy - (8 to 10 ounce)

Direcciones

  1. Combine cucumber rings and 8 1/2 qts lime water in large container. Let stand 24 hrs. Drain; then rinse. Cover with water, let stand 3 hrs. Drain.
  2. Place cucumbers in large skillet; add in 1 c. vinegar, food coloring, alum and sufficient water to cover. Bring to a boil; then simmer for 2 hrs and drain.
  3. Combine 3 c. vinegar, 3 c. water, sugar, cinnamon and candy in large dishpan. Bring to a boil, stirring till sugar is dissolved. Pour over cucumbers; let stand 24 hrs. Drain, reserving syrup.
  4. Bring syrup to a boil, pouring over cucumbers. Let stand 24 hrs. Repeat process 1 more day. Then heat syrup and cucumbers together. Place in jars and seal. Ripe or possibly yellow cucumbers are better.
