Ingredientes

  • 4 c. Water
  • 1 c. White wine Two lemons, juice of
  • 12 x Black peppercorns
  • 1/2 lb Shrimp
  • 1 x 15 ounce. can cannellini beans
  • 3 x Tomatoes
  • 1/2 c. Chopped sweet onion
  • 4 c. Arugula leaves
  • 4 c. Mixed greens Lemon juice and extra virgin olive oil for garnish

Direcciones

  1. Directions: Directions: In a large pot, combine the water, white wine, lemon juice and peppercorns. Bring to a boil. Add in the shrimp. Poach the shrimp for 4-5 min, till cooked through. Drain the shrimp, peel and set aside. To make the salad, combine the beans, tomatoes and onion in a bowl. In a separate bowl, mix together the arugula and salad greens. Top the greens with the bean mix. Add in the cooked shrimp and drizzle the entire salad with lemon juice and extra virgin olive oil.
