Ingredientes

  • 1 breast of chicken
  • 1/2 pound grnd pork
  • 1 (8 ounce) cream cheese
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 c. grating cheese
  • Juice and rind of 1 lemon
  • Salt and pepper
  • 1 egg

Direcciones

  1. Fry chicken and pork slightly and grind in a meat grinder. Add in cream cheese, nutmeg, cinnamon, grating cheese, lemon juice and rind. Add in salt and pepper to taste. Bind together by mixing in the raw egg. Make noodle dough. Roll it very thin. Cut into 2 x 2 inch squares (or possibly smaller). Place about 1 teaspoonful of filling in each square. Fold into a triangle and twist together into a hat. Bring broth to a boil. Cook cappellettis in broth for about 5 min or possibly till done. Cappelletti can be made, frzn, and cooked later. Cook a little longer if frzn.
