%20It%20truly%20is%20addictive.%20So%20much%20so%20that%20a%20friend%20yelled%20at%20me%20from%20across%20my%20kitchen%20last%20weekend,%20%22Get%20this%20stuff%20away%20from%20me!%22%20There's%20something%20so%20much%20better%20about%20this%20caramel%20corn%20than%20the%20varieties%20I%20have%20tried%20from%20the%20store%20or%20carnival%20stands.%20Maybe%20I'm%20just%20biased.%20Guess%20you'll%20just%20have%20to%20try%20this%20out%20for%20yourself.%3C/p%3E%3Cp%3EHere's%20whatcha%20do...%3C/p%3E%3Cp%3ECombine%20brown%20sugar,%20light%20corn%20syrup,%20butter,%20and%20salt%20in%20a%20saucepan.%3C/p%3E%3Cp%3EBring%20it%20to%20a%20boil,%20stirring%20constantly.%20Many%20caramel%20corn%20recipes%20recommend%20keeping%20the%20caramel%20at%20a%20certain%20temperature,%20measured%20on%20a%20candy%20thermometer.%20Once%20mine%20boils,%20I%20just%20turn%20down%20the%20heat%20enough%20so%20that%20I%20keep%20it%20boiling%20and%20then%20I%20stir%20it%20while%20it%20boils%20for%205%20minutes.%3C/p%3E%3Cp%3ENow%20here's%20the%20magic%20step.%20Stir%20in%201/2%20teaspoon%20of%20baking%20soda.%3C/p%3E%3Cp%3EA%20reaction%20occurs%20causing%20the%20caramel%20to%20foam%20and%20grow.%20My%205%20year%20old%20daughter%20was%20both%20amazed%20and%20frightened.%20You%20see,%20she%20was%20stirring%20at%20this%20point%20and%20she%20was%20convinced%20that%20it%20was%20going%20to%20spill%20over%20the%20top.%20It%20didn't.%20I%20knew%20that%20it%20wouldn't.%20I've%20made%20caramel%20in%20this%20sauce%20pan%20before.%20If%20you're%20trying%20this%20out%20for%20the%20first%20time,%20I%20do%20suggest%20that%20you%20use%20a%20saucepan%20with%20enough%20room%20for%20the%20caramel%20to%20expand%20after%20the%20addition%20of%20the%20baking%20soda.%20After%20the%20caramel%20foams%20up,%20I%20add%20in%20a%20teaspoon%20of%20vanilla%20too.%3C/p%3E%3Cp%3ESo%20now,%20it's%20time%20to%20pour%20the%20caramel%20over%20the%20popcorn.%20Pictured%20below%20are%203%20regular-sized%20bags%20worth%20of%20plain%20(not%20butter%20flavored)%20air-popped%20popcorn,%20spread%20out%20over%20two%20large%20baking%20sheets.%20A%20large%20roasting%20pan%20would%20work%20well%20for%20this%20too.%20Unfortunately,%20I%20don't%20have%20one.%20Bummer.%3C/p%3E%3Cp%3EGive%20the%20popcorn%20a%20good%20stir%20to%20evenly%20distribute%20the%20caramel,%20but%20don't%20stress%20if%20it's%20not%20perfect.%20We're%20going%20to%20stir%20this%203%20times%20during%20the%20baking%20time...every%2015%20minutes%20for%20an%20hour!%20That%20caramel%20will%20coat%20the%20popcorn%20eventually,%20I%20promise.%20Now%20you're%20all%20ready%20to%20bake.%3C/p%3E%3Cp%3EWhen%20you've%20finished%20with%20an%20hour%20of%20baking%20and%20stirring,%20put%20down%20some%20waxed%20paper%20on%20your%20countertop%20and%20spread%20the%20caramel%20corn%20out%20to%20cool.%20Go%20ahead%20and%20taste%20it...you%20know%20you%20want%20to!%20Just%20be%20careful,%20it's%20HOT!%3C/p%3E%3Cp%3EI%20put%20a%20big%20ol'%20bowl%20of%20this%20out%20at%20my%20daughter's%20cookie%20decorating%20party,%20then%20bagged%20the%20rest.%20I%20added%20a%20couple%20of%20bags%20to%20our%20teacher%20gift%20and%20delivered%20the%20rest%20to%20my%20neighbors%20with%20tins%20of%20fudge%20and%20gingerbread%20cookies.%3C/p%3E%3Cp%3ECaramel%20Corn%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.Place%20the%20popped%20popcorn%20into%20two%20shallow%20greased%20baking%20pans.%20You%20may%20use%20roasting%20pans,%20jelly%20roll%20pans,%20or%20disposable%20roasting%20pans.%20Set%20aside.%3C/p%3E%3Cp%3E2.Preheat%20the%20oven%20to%20250%20degrees.%20Combine%20the%20brown%20sugar,%20corn%20syrup,%20butter%20and%20salt%20in%20a%20saucepan.%20Bring%20to%20a%20boil%20over%20medium%20heat,%20stirring%20enough%20to%20blend.%20Once%20the%20mixture%20begins%20to%20boil,%20boil%20for%205%20minutes%20while%20stirring%20constantly.%3C/p%3E%3Cp%3E3.Remove%20from%20the%20heat,%20and%20stir%20in%20the%20baking%20soda%20and%20vanilla.%20The%20mixture%20will%20be%20light%20and%20foamy.%20Immediately%20pour%20over%20the%20popcorn%20in%20the%20pans,%20and%20stir%20to%20coat.%20Don't%20worry%20too%20much%20at%20this%20point%20about%20getting%20all%20of%20the%20corn%20coated.%3C/p%3E%3Cp%3E4.Bake%20for%201%20hour,%20removing%20the%20pans,%20and%20giving%20them%20each%20a%20good%20stir%20every%2015%20minutes.%20Line%20the%20counter%20top%20with%20waxed%20paper.%20Dump%20the%20corn%20out%20onto%20the%20waxed%20paper.%20Allow%20to%20cool%20completely,%20then%20store%20in%20airtight%20containers%20or%20resealable%20bags.%3C/p%3E%3Cp%3E_______________________________________________%3C/p%3E%3Cp%3ESpeaking%20of%20holiday%20gifts%20and%20goodies,%20just%20look%20at%20this%20beautiful%20(and%20delicious)%20box%20of%20Christmas%20cookies%20that%20my%20neighbor%20delivered%20to%20our%20door%20tonight.%3C/p%3E%3Cp%3EBut%20the%20cookies%20weren't%20all...there%20was%20also%20a%20good-sized%20bag%20of%20homemade%20Chex%20mix.%20YUM!%3C/p%3E%3Cp%3EMan,%20I%20just%20love%20this%20time%20
