Receta Caramel Flan

- Scald the milk in a double boiler for 15 minutes and set aside.
- To make the caramelized syrup: In a heavy metal pan, heat 1 cup of sugar over medium heat until the sugar is golden brown. Gradually add the 1/2 cup water to dissolve the caramelized sugar and form a syrup. Line the bottom of a 1 quart mold with the caramel syrup and set aside.
- Beat the egg yolks and slowly add 1 cup sugar, scalded milk, and vanilla. Add the zest also, if desired.
- Preheat the oven to 350 degrees.
- Pour the egg mixture into the mold. Place the mold in a large pan half-filled with water. Put the pan with the mold in the oven and bake for 1 hour or until mixture becomes firm. Cool before removing from the mold and invert into a plate.
