Caramelized Onion and Guinness Dip
I used to make a dip by combining onion soup mix and sour cream. It was a great tasty and quick onion dip, or so I thought. I got it off the back of the onion soup mix box. Not that it was much of a recipe, you just combine the packet with a tub of sour cream.
I now think that if you caramelize your onions and make your own homemade dip, it is even better. If you add Guinness beer to the recipe, it is over the top good!
Well I have to say anything with Guinness will be tasty. With Saint Patrick’s day on the horizon, it is nice to have a few “Irish” recipes to post. This one certainly fits the bill.
Caramelized Onion and Guinness Dip
Ingredients:
- 1 tablespoon olive oil
- 2 large sweet onions
- 1 tablespoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon honey
- 4 ounces cream cheese softened
- 8 ounces sour cream
- 1/4 cup Guinness beer
Directions:
In a large skillet over medium, heat the olive oil. Add the onions and cook until caramelized about 20 minutes. While cooking add salt and pepper.
Add honey and allow to cook until lightly brown.
Add Guinness beer and cook until onions are soft and beer is absorbed.
Set aside to cool. In a medium bowl combine cream cheese and sour cream.
Roughly chop cooled onions and add to sour cream.
Transfer the mixture to a bowl and chill for a couple of hours or overnight.
Serve with crudities or crackers
