- Heat extra virgin olive oil over medium heat in large skillet. Cook onions, stirring occasionally, till just turning color.
- Add in sugar and continue to cook till onions are a rich, golden and very soft, 15 to 20 min total. If onions are browning too quickly, add in 1 Tbsp. water.
- Stir in vinegar and raisins and season to taste with salt and pepper.

- Wine Suggestions: Complement this recipe with a rich Cabernet, Merlot or possibly Syrah.
- Comments: You can caramelize the onions 1 day ahead and chill them in a sealed container.
