Caramelized Onions In Flaky Pastry

Ingredientes

  • 1 c. Coarse breadcrumbs
  • 4 tsp Butter
  • 1/4 c. Minced parsley leaves
  • 2 lb Small white onion
  • 6 tsp Butter
  • 2 tsp Sugar
  • 1/4 c. Marsala wine
  • 1/4 c. Beef broth
  • 1 1/4 c. All purpose flour
  • 1/2 pt Salt
  • 6 tsp Cool unsalted butter, cut up
  • 2 tsp Vegetable shortening
  • 3 tsp Cool water ea Grnd pepper, to taste **

  1. FLAKY CRUST 1. Cook breadcrumbs in the 4 TBS. of butter toasted and golden brown in
  2. Cook onions till crisp/tender in a steamer over simmering water.
  3. Saute/fry onions in 6 TBS. butter for 10 min turning to coat all
  4. Pour in wine and beef broth. Add in fresh grnd pepper. Continue
  5. Place onion mix in partially baked crust. Sprinkle with
  6. Bake 20 min. Let rest 10 min before serving.
  7. Process flour, salt, butter and shortening till consistency of
  8. Add in 2 TBS. water and process till incorporated. If dough is too
  9. Remove dough from processor and shape into a flattened disc. Cover
  10. Roll dough large sufficient to fit into 10 inch quiche or possibly tart pan.
  11. Line chilled pastry with large sheet of aluminum foil and fill
