Receta Caramelized Shallot and Goat Cheese Pastries
I can’t believe it’s been almost a month since I did a post on mini-pizzas.
We like these little pizzas…. They’re easy, fun and cheap.
I buy a package of four 4″ squares of puff pastry for under a euro.
At that price one simply has to play.
You can top them with almost anything, they bake in under 15 minutes and they’re small enough to have as a first course.
They’re small enough that it can be a decadent first course…..
Caramelized Shallot and Goat Cheese Pastries
Total time: 35 minutes
Ingredients:
3oz (90gr) creamy goat cheese, the kind in the little square carton.
- 8 medium shallots
- 1/2 tsp Herbes de Provence
- 1 tbs Balsamic vinegar
- 1 tbs olive oil
- 10 dry-cured Greek olives, pitted and roughly chopped
- 2 squares of puff pastry
Instructions:
Peel shallots and cut in half.
Heat oil in medium nonstick skillet over medium heat. Add shallots and sauté until they are very soft well browned.
Add Herbes, vinegar, stir well and continue cooking until liquid is almost gone.
Lay puff pastry on a baking sheet. With a table knife, score a line around the edge of each pastry, about 1/3″ (1cm) from the edge.
Divide the goat cheese and spread to the scored lines.
Divide the shallots and lay on the goat cheese.
Top with olives.
Bake in a pre-heated oven at 400F (200C) for 12 – 15 minutes, until sides of pastry have puffed around middle and are golden brown.
Remember all the shallots I pulled and braided a few months ago?
I’ve already used about a third of them – it’s wonderful to be able to use them with abandon.
They’re not really expensive here – one of those braids would be about 5 euros….
The real treat is that they are good. So often when I buy them there is a lot of waste, either whole shallots or the first layer or two.
That plus the fact that I planted them, nurtured them and harvested them myself. (Pats self on back.)
Update on the banking switch I posted about a week or so ago…. and the French continued love of vast quantities of paper.
In the interest of efficiency and conservation, all of our bill are paid by direct debit.
Our phone and internet bills are online and the payment notices comes as a text on the mobile.
Very efficient.

I went online to change our bank details.
Easy as pie!
Still easy.
Sigh…..
They do love their paper.
